3 tbsp Greek yogurt, plain (low-fat) (~2 oz)
1 tbsp olive oil (extra virgin)
1 oz parmesan (grated)
¾ cups mushrooms (sliced) (~1 ¾ oz)
2 oz noodles or pasta, whole-grain (dry)
optional: 1 tbsp fresh parsley (chopped)
optional: ¼ tsp black pepper
Bring a large pot of water to boil. Add the pasta to the pot, and cook for around 9 minutes or according to the package directions. Meanwhile, follow the next steps.
Heat the olive oil in a pan on medium heat.
Meanwhile, clean and chop the mushrooms, and add them to the pan. Cook for 4 minutes. It goes well with fresh parsley and pepper if you want.
Turn off the heat and mix in the greek yogurt.
Top the pasta with the mushrooms sauce and grated parmesan, serve and enjoy!
